After years of juggling a career and a family of three children, Bo Bartlett followed her passion for cooking and enrolled in New York City’s Institute of Culinary Education in 2004. Though her schooling focused on savory cuisine, her serendipitous pastry externship at the famed Chanterelle Restaurant peaked her interest in sweet finishes.
Several months later, after much consideration on how to put her culinary experiences to use, Bo founded The Daphne Baking Company with the busy host or hostess in mind. Bo, once nicknamed Daphne, knew first hand the need for a dessert that combined high quality and convenience. Enter her one-of-a-kind tarts.
Working out of her kitchen in Kent, CT, Bo tirelessly baked dozens of chocolate tarts in search of the perfect, from-the-freezer product that was all-natural and without preservatives. She sent tarts to friends and family across the country to gather feedback, and by 2006 the tarts were ready to hit the shelves. Bo’s hard work paid off. The tarts gained popularity quickly, leading to the development of the lemon and macadamia nut versions soon after. Thanks to unbelievable customer and retailer support, Bo’s thaw-and-serve tart line has now expanded to six flavors and a ready-to-fill tart shell, available throughout Connecticut, New York, New Jersey, Rhode Island, and Massachusetts.
